According to popular legend, the coffee plant was discovered in Ethiopia by a goatherd named Kaldi. The first coffee plant was found in the mountains of Yemen, and by 1500 it was exported to the rest of the world through the port of Mokha.

Roasting transforms the chemical and physical properties of green beans into the characteristic flavour of coffee through Maillard and related reactions. Unroasted beans contain similar levels of acids, protein, sugars, and caffeine, but lack roasted taste. Most coffee is roasted commercially at scale; specialty single-origin roasting and even home roasting continue to grow.

Spray dried instant coffee

Instant Coffee — Spray Dried

Produced from a unique blend of carefully selected green beans, roasted to the required parameters, then extracted. After insoluble content is removed, the liquid is evaporated through successive stages and sprayed into a tall tower to form soluble coffee powder. The process is controlled to keep aroma volatiles intact.

Agglomerated instant coffee

Made by the same extraction and spray-drying route, then further processed with steam to form granules that reduce fines. Quality aroma volatiles are retained for a refreshing taste in every sip. Soluble coffee demand has shown strong growth after a relatively flat 1990s; in 2009, non-producing countries consumed an estimated 22.4 million bags GBE, of which 28% was manufactured in producing countries.

Freeze dried instant coffee

Instant Coffee — Freeze Dried

Freeze drying is a dehydration process used to preserve quality and ease transport. There are four stages: pretreatment, freezing, primary drying, and secondary drying. The material is frozen, then surrounding pressure is reduced so frozen water sublimates from solid to gas — protecting flavour and structure.
